Grilled Cape salmon with lime sauce

    g
    fish fillets
  • 30
    ml
    breadcrumbs
  • 45
    ml
    Parmesan cheese
  • 15
    ml
    fresh coriander, chopped
  • pinch cayenne
  • 1
    lime, grated rind
  • 15
    ml
    butter
  • TARTARE SAUCE
  • 200
    ml
    mayonnaise
  • 10
    ml
    fresh lime juice
  • 15
    ml
    capers, chopped
  • 4
    small gherkins, chopped
  • 15
    ml
    fresh coriander
  • 5
    ml
    mustard powder
 

Method

10 minutes
 
Wash and dry fillets, and place in a baking pan. TARTARE SAUCE: mix all ingredients together and spread over the fish. Season. Mix the breadcrumbs, cheese, coriander, cayenne and lime rind together and sprinkle over fish. Dot with butter. Place the fish about 15-20 cm from preheated grill and cook 10-15 minutes, depending on thickness. It should be just cooked and the topping crisp and golden. Serve with new potatoes and green salad.
