    topside of beef

    onion, sliced

    hot beef stock

    potatoes, peeled and halved (optional)
  • 2
    large sweet potatoes, peeled and cubed
  • 250
    g
    carrots, peeled and thickly sliced
  • 30
    ml
    sugar
  • 30
    ml
    golden syrup
  • 5
    ml
    ground cinnamon
  • 1
    lemon, juice
 

Method

 
Secure the topside with pieces of string so that it retains its shape while cooking. Season the meat with salt and pepper and, in a large saucepan, brown the meat in a little heated oil. Add the onions and fry until they are soft. Reduce the heat and add a little of the beef stock. Cover and simmer for about 1½ to 2 hours or until the meat is tender and done. Replenish the stock continuously as required. Add the vegetables, sugar, syrup and cinnamon 40 minutes before the end of the cooking time. Simmer until all the vegetables are soft and done. Baste the vegetables with the liquid every now and then. Season with salt and pepper, if necessary. Serve with rice and a salad.
