Elder flower lemonade

    or more, lemons, juice
  • 800
    g
    sugar
  • 250
    ml
    elder flowers
  • 15
    ml
    Epsom salts
  • 15
    ml
    tartaric acid
  • 15
    ml
    citric acid
  • 10
    ml
    grated lemon rind
  • 750
    ml
    boiling water
 

Method

 
Squeeze the lemons. Melt the sugar in the water, add all the other ingredients and leave to stand overnight. Stir occasionally. Next morning, pour into clean bottles and store in the fridge. Dilute with iced water or soda water, usually 1/4 glass syrup to a full glass water. Served chilled with slices of lemon and a sprinkling of elder flowers.
