    bicarbonate of soda
 

Method

 
Preheat the oven to 180 ºC (350 ºF). Spray a baking sheet with nonstick spray. Boil all the filling ingredients together for 5 minutes and leave to cool. Cream the butter and brown and white sugar together until light and fluffy. Add the egg and beat well. Sift the flour and bicarbonate of soda together and stir into the creamed mixture. Knead, then roll the dough into a 5mm thick rectangle. Spread the filling mixture over the dough, roll up the rectangle and cut into 7mm thick slices. Arrange on the baking sheet and bake for 15 minutes or until pale brown. Serve with tea or coffee. Makes 20-22 rounds.
