Dairy free eaton mess recipe

Ingredients

  • 100
    g
    blanched almonds
  • 250
    ml
    non-dairy cream
  • 1
    packet meringues
  • 500
    g
    strawberries
  • 80
    ml
    goji berries
 

Method

 
Heat a non-stick pan and lightly toast almonds.

Cool and roughly chop.

Whisk non-dairy cream to soft peak stage.

Lightly crush meringues and stir through cream.

Mix cooled almonds, strawberries and goji berries together and stir through meringue mixture.

Serve scooped into glasses.
