Ingredients (14)

12.00 chicken — drumsticks
salt
freshly ground black pepper
120.00 g flour — cake
oil — for frying
2.00 onion — sliced
250.00 g bacon — diced
500.00 ml brussel sprouts
250.00 g cherry tomatoes
500.00 ml stock — chicken
50.00 ml tomato sauce
25.00 ml chutney
15.00 ml Worcestershire sauce
20.00 g sago

Method:

Preheat the oven to 180 ºC (350 ºF). Season the drumsticks to taste with salt and pepper and roll in the cake flour until they’re completely coated. Shake off the remaining flour. Heat sufficient oil in a pan and fry the chicken drumsticks until brown. Arrange in a deep casserole. Sauté the onions until soft and spoon on top of the chicken. Fry the bacon in the oil until crisp and sprinkle over the chicken. Arrange the brussel sprouts and tomatoes on top. Blend the chicken stock, tomato sauce, chutney and Worcestershire sauce. Add the sago and pour over the chicken. Cover and bake for about one hour or until the chicken is done. Serve with rice. Serves 6.
