Cold chicken cordon bleu

    chicken breast fillets
  • 6
    slices cooked ham
  • 4
    low fat chedder wedges, chopped
  • 10
    ml
    fresh chopped origanum
  • salt and freshly ground black pepper
  • 50
    ml
    margarine
 

Method

 
Preheat oven to 200 ºC. Flatten chicken fillets as thinly as possible between two pieces of plastic. Lay 2 slices of ham over each of the the fiillets and place cheese wedges in the centre, season and sprinkle with origanum. Roll the chicken up and secure with toothpicks. Place the stuffed breasts, seam side down, in a small dish. Dot each with a little margarine. Bake for 20-25 minutes. Slice when cold. Serves 4.
