    g
    self-raising flour
  • pinch salt
  • 200
    g
    sugar
  • 4
    extra-large eggs
  • 500
    ml
    milk
  • 60
    ml
    melted butter
  • 5
    ml
    vanilla essence
  • 100
    g
    coconut
 

Method

 
Spray a 25 cm microwaveproof dish with non-stick spray. Combine the self-raising flour, salt and sugar in a large mixing bowl. Beat the eggs, milk, butter and vanilla essence together and add to the dry ingredients. Mix well, add the coconut, mix and turn into the prepared bowl. Microwave for 10 minutes on 100 per cent power. Leave for at least 10 minutes to allow the centre of the tart to set. Serve with custard or syrup.
