Coconut rice with lime syrup

    long-grain rice
  • 625
    ml
    water
  • 185
    ml
    coconut cream
  • 30
    ml
    castor sugar
  • 65
    ml
    soft brown sugar
  • 125
    ml
    water
  • 65
    ml
    fresh lime juice
  • 15
    ml
    lime rind, julienned
  • coconut cream, chilled, to serve
  • fresh tropical fruit, to serve
 

Method

Put rice in a colander and wash well. Place rice and water in pan over medium heat and bring to boil. Allow to simmer rapidly for 10 minutes or until almost all the water has been absorbed. Add coconut cream and castor sugar, cover pan and place over a very low heat for 5 minutes. Put brown sugar, water, juice and lime rind in a small pan over low heat and simmer for 4 minutes or until mixture is syrupy. Divide coconut rice between 4 bowls and spoon over syrup. Serve with chilled coconut cream and a tropical fruit such as papaw or mango
