  • MACAROON BUNS
  • 4
    egg whites
  • 30

    castor sugar
  • 125

    ground almonds
  • a few drops of vanilla essence
  • 5

    cocoa powder
  • sesame seeds
  • BURGERS

    dark chocolate, chopped

    ml
    cream
  • 250
    ml
    cream, whipped
  • 1
    small pineapple
 

Method

 
1. MACAROON BUNS: whisk egg whites to a firm peak and add castor sugar, continuing whisking. 2. Fold in the remaining ingredients and pipe mixture onto baking tray lined with greaseproof paper. 3. Sprinkle with a few sesame seeds and bake at 180 ºC for 15 minutes. 4. BURGERS: heat the 65 ml cream, add the chopped chocolate and stir until dissolved, then add cocoa powder. 5. Allow mixture to cool a little, fold in the whipped cream and pour into cookie cutters 1 cm deep. 6. Leave to set in the fridge. 7. To assemble: place the 'burgers' between two 'buns', fill with cream and garnish with strawberries and mint leaves. 8. Cut pineapple lengthways into strips and square off to make 'chips'.
