Cheese and tomato savoury pie

    margarine

    cloves garlic, crushed

    dried basil
  • 1
    loaf of bread, sliced and crusts removed
  • 2
    tomatoes, sliced
  • 1
    onion, sliced
  • 4
    large eggs, lightly beaten
  • 150
    ml
    milk
  • 200
    g
    Cheddar cheese, grated
  • CUCUMBER SALAD
  • 1
    cucumber, chopped
  • 60
    ml
    peanuts, coarsely chopped
  • 30
    ml
    oil
  • 5
    ml
    mustard seeds
  • 8
    curry leaves
  • 2
    ml
    sugar
 

Method

1 hour
 
1. Mix margarine, garlic and herbs together and spread onto slices of bread. Cut slices in half. Layer in a greased ovenproof dish with tomato and onion slices in between. 2. Mix eggs, milk and seasoning to taste and pour over bread. Sprinkle with cheese and bake in preheated oven for 45 minutes or until golden and crisp. Serve with cucumber salad. 3. CUCUMBER SALAD: Mix cucumber and peanuts together in a serving bowl. 4. Heat oil in a small saucepan and add mustard seeds. When they pop, add curry leaves, stir and then pour over salad. Stir in sugar and season to taste.
