Black olive chicken rolls

    cloves garlic, crushed

    anchovy fillets, chopped

    fresh thyme leaves

    shallot or small onion, peeled and chopped

    stoned black olives

    chicken breast fillets
  • salt and freshly ground black pepper


Preheat oven to 180 ºC. Process garlic, capers, anchovies, thyme, shallot, olives and olive oil in a food processor to make a paste. Place chicken breasts between 2 sheets of greaseproof paper and pound with a rolling pin until flattened and about twice the original size. Season with salt and pepper and spread olive paste on each. Roll up breasts and secure with toothpicks. Cut each chicken roll in half and place in a lightly oiled ovenproof dish. Cover with foil and bake for 20 minutes, or until cooked through. Serve with pasta tossed in olive oil, chopped parsley, grated Parmesan cheese and cream. Serves 4.
