    olive oil

    medium onions, finely chopped
  • 2
    carrots, thinly sliced
  • 1
    large potato, finely diced
  • 1
    clove garlic, crushed
  • 1
    Litres
    vegetable stock
  • 2
    Tbs
    tomato paste
  • 1
    tsp
    dried basil
  • 100

    haricot beans, soaked overnight in boiling water and 5ml bicarbonate of soda

    or can of beans, drained and rinsed
  • 100

    green beans, sliced
  • 1
    tsp
    salt and pepper (check seasoning before adding)

    fresh Parmesan, grated, to serve
  • 1
    Bread, to serve
 

Method

Heat the oil in a frying pan and gently fry the onions, carrots and potato until softened. Add garlic, stock, tomato paste and basil. Simmer until thickened. Add haricot beans, followed by the green beans; adjust seasoning and simmer for another 20 minutes. Serve with Parmesan and bread.
