Bang-bang chicken

    glass or instant noodles
  • 6
    cloves garlic, crushed
  • 1
    bunch fresh coriander leaves (dhania), coarsely chopped
  • 125
    ml
    smooth peanut butter
  • 65
    ml
    soy sauce
  • 30
    ml
    honey
  • 5
    ml
    oil
  • 15
    ml
    white wine vinegar
  • 5
    ml
    dry sherry
  • 2
    cucumbers, peeled and sliced into thin strips
  • coriander leaves (optional)
 

Method

 
Remove the chicken skin and shred the meat. Set aside. Prepare the noodles according to the packet instructions and set aside. Process the garlic and coriander in a food processor to form a paste. Add the peanut butter, soy sauce, honey, oil, vinegar and sherry, and process until smooth. Add a little water if the paste is too thick. Drain the noodles, arrange on 6 serving plates and top with the cucumber strips. Moisten the shredded chicken with a little of the sauce and spoon on top of the cucumber. Garnish with coriander leaves if desired and serve with the remaining sauce on the side. Serves 6.
