Baked polenta

  • 900
    ml
    water
  • 15
    ml
    butter
  • 2
    ml
    salt
  • 250
    ml
    polenta
  • 30
    ml
    Parmesan cheese, freshly grated
  • 125
    ml
    black olives, pitted and chopped
  • black pepper to taste
 

Method

 
Bring the water to a boil, add the butter and salt and then gradually whisk in the polenta in a steady stream.
Simmer over a low heat for 5 to 6 minutes, stirring constantly until the mixture comes away from the sides of the pan.
Stir in the Parmesan and olives and season with black pepper.
Set in a loaf tin and place in a preheated 180 °C oven for 10 minutes.
Remove from the oven, cut the polenta into slices and serve with coq au vin (see recipe).
