Asian mince lettuce cups

Ingredients

    glug PnP Finest extra-virgin olive oil
  • 1
    medium onion - finely sliced
  • 2
    Tbs
    garlic - ginger and chilli paste
  • 125
    g
    button mushrooms - sliced
  • 500
    g
    ostrich and beef mince
  • 1
    tsp
    beef stock powder
  • 2
    star anise (optional)
  • 60
    ml
    sweet chilli sauce
  • 3
    Tbs
    soya sauce
  • 1
    cup
    water
  • 1
    packet spring onion - chopped
  • 1
    packet bean sprouts
  • 1/2
    packet coriander or basil leaves
  • 1
    packet raw peanuts
  • 1
    medium iceberg lettuce - separated
 

Method

Heat oil in a pan and fry onion to soften. Add paste and mushrooms.

Fry for a further 2-3 minutes, remove from pan and set aside.

Heat more oil and fry mince until well browned. Add onion mixture, stock powder, star anise, sauces and water.

Simmer for 20 minutes until sauce has thickened and reduced. Serve mince with remaining ingredients in lettuce cups

Great idea: Cook spaghetti or egg noodles according to packet instructions and serve with leftover mince for spaghetti bolognese, Chinese-style.

Note: replace beef and ostrich mince with chicken, turkey or pork mince if desired.
