Bulgur wheat

Bulgur what is also called cracked wheat, is made from wheat that has been soaked, dried and parched before being 'cracked' into smaller pieces. Traditionally used in Middle Eastern food, bulgur wheat may be enjoyed as an accompaniment, or used to make salads.
