3 things to do with... tomatoes

With cheese, with pastry, with eggs. It's tomato season!

Joy is the sight of gorgeous impossibly red tomatoes, musky and still warm from the sun. Whether the small perfectly formed rosa tomato, the trendy vine tomato or a big juicy beef tomato... summer is the best time to enjoy this vegetable. Ehrm.. I mean fruit.

A juicy panzanella salad is a great addition to any braai. For me the secret is slightly toasting the sourdough bread chunks, to keep it from going soggy, and adding a mere grating of dark chocolate for incredible flavour.

Or pop rosa tomatoes on a oiled baking tray and slow roast with balsamic vinegar, sugar and thyme. It is so tasty and lovely when served with anything from garlicky pasta to bruschetta.

Here are 3 things to do with tomatoes right now:

1. Baked ricotta and roasted tomato
This is a fantastic zero-effort starter or light meal that will impress. Pop into the oven, drink a glass of wine, done.

2. Steak with charred tomato & feta
Zoosh up any braaied meat with the delicious combination of sweet tangy tomato and creamy feta.

3. Gazpacho
This chilled tomato soup is the perfect start to any dinner party. Serve in shot glasses as a party canape.
