This easy fondant icing will take your cakes from zero to hero

Fondant icing, or plastic icing as it’s sometimes unfortunately known as, is probably the only time that a cake frosting can polarize people. You either love it or you hate it!

But if you’re not a fan of it, then you’ve probably never tasted the homemade version – which, I might add, can be made in your microwave with just two ingredients. Say goodbye to stirring over the stove, adding all manner of curious ingredients. Who has liquid glucose close on hand, anyway?

Marshmallow fondant tastes infinitely better than the store-bought kind and I find it easier to work with. In fact, it’s so easy to whip up a batch that even your kids can help – if they don’t eat all the marshmallows, that is!

The best thing about marshmallow fondant is that it stores really well – if it becomes hard, simply pop it in the microwave briefly until soft. Roll it out and use it to cover birthday cakes, make edible figurines as cake toppers, frost biscuits or even use it as an edible play dough to keep the little ones busy over the holidays.
