Easy marshmallow fondant icing


Fondant Icing

  • 900
    g
    icing sugar, sifted
  • 450
    g
    white marshmallows
  • 80
    ml
    water
  • 15
    ml
    coconut oil
  • 1
    tsp
    vanilla essence
  • gel food colouring
 

Method

Place the marshmallows and water in a large microwave safe bowl. 

Microwave on full power at 30 second intervals until all the marshmallows are melted and the mixture is smooth. 

Add the vanilla, coconut oil then gradually add the icing sugar until a soft dough forms (you might not need all of the icing sugar). 

Knead the fondant until smooth then tint it the desired colour using food colouring.
