All you need is one cup of basmati rice, two cups of water, and a generous pinch of salt. Combine all the ingredients in a microwave-safe bowl, give a quick stir and microwave on high for 15 minutes.

Allow the rice to stand and steam in the microwave with the door closed for a further 2–5 minutes. Remove the rice from the microwave, gently fluff with a fork and serve while warm and steamy!

Easily amp up the flavour by substituting stock for the water or by swapping one cup of water for coconut cream for coconut rice. You can even add some of your favourite spices to make a nicely spiced version! The only time you may need to be cautious is when doubling the quantities, as the cooking time will also need to be increased.

This is the ideal rice hack for when you’re tired of soggy basmati, but couldn’t be bothered to soak, rinse, and keep a watchful eye, or you’ve already got too many pots on the go but are in desperate need of fluffy basmati rice!
