Easy Thai favourite recipes for summer

I can eat Thai food throughout the year. It’s comforting and nourishing in winter and refreshing and revitalizing during the summer months.

Here’s a list of my favourite Thai recipes that are super easy to prepare.

Thai green curry for dummies – the easiest Thai green curry you’ll ever make, A cheat’s version.

Tom yum soup with prawns – this is my favourite soup. Spicy, hot and sour. It tantalizes every taste bud. I enjoy mine with whole prawns in their shells – this gives the soup a beautiful fragrant sweetness.

Tom Kha Gai – This creamy chicken coconut soup is my husband’s favourite. It has a lovely flavour of lemon grass, lime, coriander, coconut and lastly some chilli. I poach a chicken breast on the bone in the stock, shred it and add back to the soup. Easy and so much more flavour.

Sweetcorn fritters – A scrumptious and rather addictive combination with spring onion, chilli and coriander. Just dip into sweet chilli and be taken to a happy place.

Thai fishcakes – A mixture of hake, chilli, coriander, spring onions, garlic and ginger formed into little patties and fried until golden. Served with assorted dipping sauces and steamed veggies. Sooooo good!

Thai style steak salad – Juicy rump steak marinated in Thai flavours. Cooked medium rare, sliced and served with a mouth-watering Thai dressing and greens.  A serious crowd pleaser.
