It’s easy – and delicious – to include vegetables such as broccoli and green beans in your diet. All you need are some go-to veggie-packed recipes, so we’ve rounded up one for every day of the week. You’re welcome!
Monday: Nono’s teriyaki beef stir-fry
McCain’s frozen stir-fry mixes make adding a range of vegetables to your diet a breeze. This one uses McCain Asian Stir Fry Mix, with McCain Baby Peas popped in for some extra goodness. Add a flavour punch with soy sauce and lemon juice and supper is sorted.
Tuesday: Creamy chicken and vegetable stew
Potatoes, chicken and bacon are slow-cooked together in a deliciously creamy sauce. The recipe calls for 1kg of mixed vegetables so you know it’s also packed with goodness. We recommend McCain Garden Mix – a mixture of carrots, green beans, cauliflower, broccoli and baby marrow. Simply add from frozen and simmer until cooked but still crunchy.
Wednesday: McCain Creamed Spinach, tomato and feta crustless quiche
With a mix of cheeses and creamed spinach, this quiche is super decadent. It’s also easy to make. Simply mix all the cheeses and vegetables with eggs, milk and yoghurt, and pour into a baking dish – no fiddly quiche crust required!
Thursday: Thai yellow curry with chicken, butternut and green beans
A hearty curry doesn’t need endless time to make. Use store-bought, premade curry paste, coconut milk and frozen McCain Green Beans with your choice of protein. This recipe calls for chicken although fish would work equally well, or leave out the meat altogether for a vegetarian option.
Friday: Tomato and spinach soup
No winter meal plan is complete without a warming soup. Roasting the tomatoes for this one lends extra flavour, and the kids won’t even notice the addition of McCain Garden Spinach in it.
Saturday: Chicken lasagne with butternut and broccoli
Forgo the standard meat lasagne for one that is equally rich and creamy. Baked pasta dishes are also a way to sneak some veggies in. McCain Broccoli Florets is one that goes particularly well with a creamy, cheesy sauce.
Sunday: Bacon-wrapped pork roast with apples
Go all out at the end of the week with a succulent roast. Pork and apple is a classic combination, and wrapping the pork in bacon adds extra juiciness and flavour. Serve with mashed potatoes and cooked McCain Brussels Sprouts for a dish of which everyone will want seconds.
