Your weekend feast: Easter edition – 30 March 2018

As you may have guessed, this week’s menu is filled with all things delicious! How can we kick off the Easter weekend without a hit of hot cross bun goodness? Try this brand new recipe – hot cross bun scroll scones. And yes, that is custard you see!

We’ve got a great meat-free version of the popular Scotch egg. This recipe calls for chickpeas, making them very falafel-esque in flavour. They’re a great (read: healthy) morning mouthful before a chocolate binge. 

If fish or lamb isn’t your thing then give this pomegranate-adorned roast chicken a bash. It’s been developed especially for the low carb folk but if you don’t want to serve it with cauli rice, go all out and make the best roast potatoes of your life (see recipe below!).

For the serious red meat eaters – get ready for this! Apricot, origanum and garlic braised lamb shanks. Are you licking your lips? Obviously these go perfectly with a rich and creamy dollop of mashed potatoes. 

To complete your Easter lunch, a batch of these crowd-pleasing roast potatoes is a real must. 

And a good side dish will never go amiss. Don’t turn your nose up at baked cauliflower with cheese sauce. It’s the gift that keeps on giving.
