Viral trend alert: The 3-layer “magic” custard cake anyone can make

We all have Jo Cooks (and Instagram) to thank for the sweet, eggy baked discovery of this trending three-layered custard cake that’s as easy to make as it is pantry-friendly.

All it takes is eggs, sugar, butter, vanilla extract, flour and milk – but it manages to hit the texture trifecta with a crunchy golden-brown top then a soft custard layer atop a set custard base. Give it a dusting of icing sugar and you’ve created magic!

Aside from being patient (it takes quite a long baking time to get the desired effect), there aren’t too many tricks to this magic cake. It’s fairly simple and less effort is key – all you have to do is make sure you don’t overdo it when you fold the egg whites in. A lumpy egg-white-dotted batter is how the crunchy top layer is created.
