Holiday eating

The little people have been home for almost 3 weeks now and shoot me but it’s not easy is it? I think I might kiss the school teacher when I see her on Monday.

In between the play dates and various trips to the usual kiddy haunts, you need to quell those rumbly tumblies with healthy snacks and meals. It’s also not so funny when your little rotter darling turns up his nose to the meals you have slaved over to try and get something healthy down his gullet.

So in the name of sanity I have put together a few ideas for meals and activities to use long after the holidays end.

Simple suppers

1.    One-dish-wonders: this dish is healthy and delicious, best of all it’s quick. Make double for left-overs.

2.    Kebabs: try these juicy boerewors and corn babies with a baked potato and cream cheese for a funky meal the kids will just love.

3.    Frittata: these one-pan-wonders are a great way to get healthy and quick food onto the table. Serve with buttered brown bread and you’re done. Try this lovely avo and bacon or this fun cheese and biltong plate of happy.
Make the food the activity

1.    Make simple biscuits – you can make funky gingerbread men and peanut butter cookies and crunchies. Keep things healthy with some seed and nut bars.

2.    Make pizza – either buy the pizza bases or make a simple one and dress it up with whatever your kids like. Use the opportunity to get a healthy tomato sauce into them on the base and use veggies as well as their favourite ingredients on top.

3.    Make pancakes – they don’t have to be dripping in sugar-highs, go savoury with things like creamy spinach and cheese and ham.

4.    Smoothies – kids love these healthy ‘milkshakes’ and it’s fun to cut up all the goodies that go in.
A lovely one is strawberries, bananas, a dash of honey and some yoghurt and milk, but you can go with pear….  Or whatever your little princess adores.

And remember… keep calm and have a cupcake.
