Convection ovens, much like traditional conventional ovens, produce heat from elements within the oven to bake and cook food items. The difference is that convection ovens are fitted with an internal fan that continuously circulates the hot air throughout the oven.
Traditional ovens have hot and cold pockets, whereas with conventional ovens the heat is evenly distributed throughout the cooking process. This produces evenly cooked goods every time.
Convection ovens are great for big family cookouts because even if you fill all the racks at the same time, you will still end up with evenly cooked food.
The fan also speeds up the cooking process and improves the cooking process overall, yielding superior results in a much shorter time span. Any recipe can be adapted to suit convection cooking – a good rule of thumb is to reduce the temperature by 10 to 20 degrees Celsius, but all oven temperatures vary, so remember to keep an eye on your dishes.
