Midweek recipe ideas for low carb cooks – 5 October 2016

And as much as we like to stick to the “everything in moderation” adage at Food24, we know there a many of you who do follow a low carb lifestyle and so these recipes are for you! Just some simple midweek inspiration to motivate you to change things up if you feel like you’re stuck in a menu rut (we’ve all been there).

Breakfast
How does a healthy quiche ‘muffin’ sound? They are great hot or cold and can be kept in the fridge for an easy lunch option on-the-go.

Snack
Baked apples sound mundane – but add some creamy Mascarpone cheese, some toasted almonds and you’ve got a rich and fruity snack that will curb cravings for junk food during the day.

Lunch/dinner
For a fresh and healthy protein packed meal – enjoy an exotic Asian-style shredded chicken salad, complete with a tangy, spicy lip smacking Asian dressing.

Dessert
Love chocolate mousse? Then these creamy, velvety chocolate pots are for you! All it requires is three simple ingredients. The best part is that it can be made well in advance. It couldn’t be any easier!
