Midweek recipe ideas for low carb cooks – 28 September 2016

And as much as we like to stick to the “everything in moderation” adage at Food24, we know there a many of you who do follow a low carb lifestyle and so these recipes are for you! Just some simple midweek inspiration to motivate you to change things up if you feel like you’re stuck in a menu rut (we’ve all been there).

Breakfast

Omelettes are a filling, quick and easy breakfast option and this one is all that with the added bonus of being tasty and low carb too! This gammon and Cheddar omelette can be ready in just 20 minutes.

Snack

Snacks like these LCHF Mozzarella sticks shouldn’t only be enjoyed at cocktail parties, they make awesome lunch box snacks. Warm and stringy on the inside with a crispy shell, it’s the ideal snack to keep you going in between meals, because it simply tastes indulgent and will satisfy your cravings.

Lunch/ dinner

In this pesto chicken and brown mushrooms on zucchini noodles dish, instead of using normal pasta, zucchini noodles are used and this combined with the mushrooms and other flavourful ingredients makes it a low carb gem. Don’t let the gorgeous looks and your limited time put you off cooking because this meal only takes 25 minutes and is super easy!

Dessert

Indulge in this decadent rooibos tea and blueberry panna cotta with nut butter caramel sauce dessert without any regrets or feelings of guilt, because it’s low carb, of cause!
