Midweek recipe ideas for low carb cooks: 2 August 2017

Breakfast
Nothing screams ‘healthy breakfast’ like granola! Unfortunately most store-bought versions are often packed with refined ingredients and loads of sugar. Not this recipe! It calls for natural, good-for-you nuts and seeds, coconut oil, xylitol and a touch of honey (which you can leave out if you’re counting carbs strictly!). Enjoy with some Greek yoghurt and your favourite Vitamin-boosting berries.

Snack
All those on the snack train, raise your hands! It’s time to up your game and ditch the biltong for some homemade cheese biscuits. They’ll be the envy of your Banting buddies! You’ll need a food processor to make them and some time on your hands but they’ll definitely be worth the effort. Serve with a rich and creamy ricotta dip.

Lunch/dinner
Tray bakes are the universe’s way of sending us a much needed pick-me-up when things get chaotic in life. They’re usually pretty fuss-free, easy to prep, leaving the oven to do the hard yards. Hungry tummies will love this spinach, leek and feta tart with sweet potato crust. The best part is that it only requires eight ingredients!
