Give your veggies a boost with these tasty and nutritious ideas

Brussels sprouts

Vegetables are packed with nutrients and make up an essential part of a healthy diet, but let’s face it, sometimes they can do with a little help to really up the yum factor. Try these recipes and say goodbye to bland veggies for good!

Brussels sprouts with bacon

The saltiness of bacon gives brussels sprouts an extra layer of flavour. Try classic brussels sprouts with bacon or get creative and serve them as kebabs. Or, if you’re out to impress, substitute chorizo for bacon, like in this recipe for shredded brussels sprouts with chorizo and walnuts.

Carrots and cumin

This is the perfect hearty duo for cold days. They work well together in soup (try this creamy carrot with cumin and coconut) and curries (like in this butter bean and potato curry). If you or the kids aren’t fond of veggies, carrots are also easy to disguise – try these roasted meatballs with sweet potatoes and you’ll see exactly what we mean.

Peas with mint

Fresh and flavourful, peas and mint will always be a winning combination! And they’re so versatile. Enjoy them in a frittata with courgettes and ricotta, in linguine with pancetta, as a side with cabbage and pancetta or even on a breakfast burger!

Spinach and feta

Another super versatile combination; there are endless ways to enjoy spinach and feta. We love this McCain Creamed Spinach, tomato and feta crustless quiche, and you can’t go wrong with lemony tagliatelle with spinach and feta. For a meaty main with the wow factor, serve this pork fillet with spinach and feta filling.

Remember, you can spice up your life and make it easier by using McCain’s frozen vegetable range. McCain’s Diced Carrots, Garden Peas, Brussels Sprouts and Creamed Spinach can all be used in these recipes if you don’t have the fresh version on hand.
