Bacon ‘banting’ snacks

Calling all bacon lovers!

According to Prof. Tim Noakes and the LCHF diet – these bacon wrapped mouthfuls are perfect examples of what we’re allowed to eat without feeling guilty!

Let’s get our bacon on!

Roasted bacon and apple wedges

Apple wedges and sage wrapped in streaky bacon and roasted until crispy and golden. YUM!
Serves: 4

You will need:
3 small golden delicious apples, cored and cut into 4 wedges
12 sage leaves
12 slices of streaky bacon
micro rocket and watercress leaves
Parmesan olive oil

Preheat the oven to 220°C.
Wrap a wedge and sage leaf together with streaky bacon, repeat with the other 11.
Roast for +- 20 minutes or until the bacon is crispy and the apple is soft.
Serve immediately with micro leaves and a drizzle of parmesan olive oil.

Roasted bacon jalapeno poppers

Jalapenos stuffed with Danish feta (or any cheese for that matter) and wrapped in streaky bacon. Roasted until crispy and oozing cheesy goodness. OMG!

Here’s how:
I use whole jalapenos in the jar. The trick is to make an incision along the side lengthways and remove the seeds. Blanch & soak the chillies in cold water to tone down the brine flavour (30 minutes will do the trick).

Stuff ‘em with whatever cheese you have – mozzarella, feta, cheddar, cream cheese or even a mixture.

Wrap each stuffed chilli in a slice or two of streaky bacon and use a wet toothpick to secure.

Pop onto a greased baking tray and roast in a 220 °C +- 20 minutes. Serve with smoked paprika mayo.
