3 things to do with… tuna

Sometimes the only thing you have at the back of your cupboard is a tin of tuna. With a little imagination it is quick and easy to turn it into a delicious and nutritious meal. (Low-fat. Full of Omega 3. Good source of protein.)

Tuna is the star of the show in one of my favourite quick fixes – tuna and butter bean salad
Combine tuna chunks with a tin of butter beans, chopped red onion, some chopped green herbs, fresh chilli and a healthy glug of olive oil. A squeeze of lemon, a scattering of rocket, parmesan and some sea salt flakes and it becomes worthy of more than just being a desk lunch.
