3 things to do with… rotisserie chicken

Using a rotisserie chicken, or leftovers from a home-roasted chicken is a fast way to get a delicious meal on the table.

One of my favourite ways of using up leftover rotisserie chicken is a chicken sarmie: Pile some slices of chicken with Parmesan, homemade mayo and rocket on really good fresh bread. Yum. Or add a smear of cranberry relish and slices of brie for something a bit more decadent.

For a substantial snack I make a quick version of chicken nachos: Combine shredded rotisserie chicken with bottled salsa. Layer nacho-style corn chips with chicken and top with sliced jalapenos and cheese. Grill until the cheese is melted.

1. Coronation chicken
Creamy and fruity. No wonder it is the Brits favourite way of using up the Sunday Roast.

2. Chicken Caesar
Replace the marinated chicken breast with sliced rotisserie chicken for a substantial salad.

3. Mini chicken pies

Just add shredded rotisserie chicken to the sauce and you’ll have tasty pies in no time!
