3 things to do with… eggs

Eggs… just the word conjures up visions of oozing yellow,
begging to be mopped up with crusty bread. Whether the nostalgia of boiled eggs with cheesy toast soldiers or puffy golden souffle omelettes gets you smiling, there
is no denying the timeless appeal of an egg.

Soft poached eggs on

is an all-time breakfast favourite in my house. Or skip
the fry-up in favour of a bacon and egg salad with a citrus dressing
or try paperthin omelettes wrapped around soya-glazed bacon. They are great as party
snacks too.

For dinner, I often whisk egg and grated parmesan through warm spaghetti for a creamy
pasta sauce that needs no cooking. Topped with slow roasted tomatoes it is
guaranteed to please even the fussiest eaters.

1. Asparagus &
poached eggs

Asparagus are now at their best, and dipped into soft
poached eggs they make an elegant meal for ladies who lunch. Or for the ones who
lie on the couch and watch Masterchef.

2. Moroccan tomato and eggs
A saucy one-pan brunch dish that is guaranteed to cure a
hangover. To take it to the next level I like adding some sliced chorizo to the
pan with the onions.

3. Bacon and egg puff
pastry pie

Fry some bacon, mix with eggs and peas. Pour into a dish lined
with ready-made puff pastry. Dinner. Delicious.

Low-fat Pea and
Asparagus frittata
If that is too fattening for you, loose the bacon and puff
pastry and instead serve up as a delicious frittata that is good hot or cold.
