6.00 eggs — large, beaten
50.00 ml milk
250.00 g bacon — streak, rindless
50.00 ml soy sauce — light
15.00 ml brown sugar
30.00 g rocket
30.00 g salad greens

Method:

1. Whisk all the eggs and the milk together. Grease a small frying pan and heat it over a medium heat. Pour just enough egg mixture into the pan to cover its base. Cook for a few minutes until set, then turn over and cook the other side. Continue with the rest of the mixture.
2. Fry the bacon and then add the soya
sauce and the brown sugar. Cook this filling for a few minutes, stirring continuously, then remove from the heat. Spoon the bacon mixture down the centre of each omelette, garnish with the fresh leaves, and roll up. Slice diagonally and serve at once.
