You’ve got to try this rainbow pancake cake recipe

An awesome book landed on #Trending’s desk last week. Created by online phenomenon Foodies of South Africa, it’s a collection of the most popular, most scrumptious recipes they’ve shared on social media. Among them is the cheesy egg toasty, shared 660 000 times on Facebook, and the hash brown breakfast pizza, which got 986 850 views. Here is one recipe you will find inside:

INGREDIENTS

For the pancakes
. 3 eggs
. 4 cups milk
. 4 tbsp oil
. 1 tbsp vanilla essence
. 3 cups cake flour
. Food colouring in four different colours of your choice

For the icing
. 3 x 230g tubs of cream cheese or smooth cottage cheese
. 6 tbsp plain yoghurt
. 1/2 cup icing sugar

For serving
. Fresh raspberries
. 2 to 3 tsp icing sugar

METHOD
1. In a large bowl, combine the eggs, milk, oil and vanilla essence.
2. Sift the cake flour and baking powder into this mixture.
3. Blend together until smooth using a mixer.
4. Divide equal amounts of the pancake batter between four bowls and add a different colour food colouring to each bowl. Mix until combined.
5. Add more food colouring as needed.
6. Heat oil in a pan and fry the pancakes.
7. For the icing, blend the cream cheese with the yoghurt and icing sugar until smooth.
8. Spread the icing sugar over each pancake and then stack the pancakes one on top of the other.
9. Ice the top of the pancake cake and garnish with fresh raspberries and a dusting of icing sugar.
10. Slice and serve.
