Your flop-proof scone recipe

These are the quickest treat you can whip up when unexpected guests arrive. Simple, fool-proof, and the house smells heavenly. This is my dad’s absolute favourite treat and will always be found in my home.

Notes: The sugar levels can be adjusted to suit the whole family. The scones can be served with butter, jam, fresh cream, cheese or any way you prefer.

INGREDIENTS

3 cups self-raising flour

1/2 cup sugar (add more if you like)

1/2 teaspoon salt

1 cup butter / good quality margarine

1 egg, beaten

3/4 cup milk

1 tsp vanilla essence

METHOD

In a large bowl, combine flour, sugar and salt. Rub in the butter. Mix the egg, vanilla essence and milk in a small bowl and, using a fork, stir into the flour mixture until moistened. Knead the dough lightly (don’t overwork because it won’t rise and will be stodgy). Roll out dough and cut into desired shapes. Place on a lightly greased baking sheet and bake for 12 to 15 minutes in a preheated oven at 200°C, or until lightly browned to your liking.

Macerated Strawberries

Add 2 tsp sugar to 10 sliced strawberries. Cover and leave for 15 minutes.
