WATCH: First look inside the new La Colombe

On the Silvermist Estate against the slopes of Constantia Nek, is La Colombe, one of South Africa’s fine dining institutions and currently in the prestigious list of Eat Out top 10 restaurants

The announcement of a new kitchen leadership team under Executive Chef James Gaag earlier this year was a strong indication that the restaurant was planning some exciting developments. This week, we visited the restaurant and chatted with James, to see what all the secrecy is about. 

The dining room is bright and open to the surrounding forests, which gives it the feeling of a the world’s most sophisticated treehouse. White and green are complimented by neutral stone textures, and unique wood and glass sculptures. “I’m delighted to finally realise my dream of running La Colombe. My team and I are excited for this new and exciting chapter. We’ll be keeping some signature dishes on the menu, and can’t wait to introduce everyone to the new dishes. First and foremost, is a balance of flavours. I believe food should be delicious and inviting and not overthought, overworked or overcomplicated,” says James. 

Chef James will be supported by Jess van Dyk as Head Chef, while Keegan Braithewaite takes over as Sous Chef. There’ll be a new menu, keeping true to form to deliver the kind of dishes diners have come to expect of this award-winning establishment.

La Colombe is running their annual, and tremendously popular, Winter Lunch Special through until 31 August 2018. Bookings through their website are strongly advised.
