Veggielicious weekend menu

Our weekend menus usually include morning fry-ups and evening braais, so we have decided to mix it up a bit by focusing on all that is vegetarian.

So put away your steak knives and open the fruit and veg draw, this weekend is for the veggies!

Friday:

A quick and easy way to end off a hectic week is with a delicious brupper! Breakfast for supper, usually eaten at the end of the month and probably created by some ingenious bachelor, is the ideal partner to fluffy slippers and Friday night movies.

Try either a cheese and spinach omelette or an open feta and leek omelette.

Saturday:
Start your Saturday off with a big cup of coffee, some fresh fruit and how about dunking some buttermilk rusks in that mug?

For lunch, whip out your spouts and seeds and throw together a colourful butternut and chickpea salad.

Serve this salad as a side dish to these gorgeous brinjal and pepper tortilla wraps.

Lentil bobotie is a great variation from the South African original and, who knows, it may become a repeat performer on the dinner table.

Sunday:

For those who aren’t in the know, today is International Chocolate Day – so let loose and indulge those cravings, guilt free, coz’ you have to show your support!

For breakfast tickle those taste buds with choc-chip pancakes, drizzled in a sweet honey sauce.

Why not whip up a batch of hot chocolate chilli cupcakes– decadent and delovely.

You can’t have a day of chocolate without a silky and seductive fondue- try this version with sautéed summer fruits.

And to end off a deliciously sinful Sunday, sip a cup of decadent white hot chocolate with choc covered cigars.
