Spekkoek

Spekkoek is a Dutch-Indonesian layered cake that originated in the days of the Dutch East Indies

It probably started off as a Dutch cake that turned into a fusion cake.

The curious name because the double layer affair looks just like a bacon cake.

It’s made by using two different colours, poured on top of one another – the one having been baked already.

It’s a massive job, requiring loads of patience, a ridiculous number of eggs  which is why the cake is so expensive.
