Limburg

Apart from the fact that the dialect sounds like a completely different language, the province is different as well.
The land isn’t flat, it’s hilly and because of this, the food changes.

Game, especially in hunting season graces many tables and the province is the largest asparagus producer in the Netherlands, which is why, during spring, it’s eaten with abandon.

Traditionally the vegetable is eaten with ham and hardboiled eggs and boiled potatoes.

Tête de veaux (a steak and mushroom dish in a rich tomato sauce) and Limburgse vlaai (a marmalade filled tart) are probably the most well known.
