Inside a KFC kitchen – how is it made, where does the chicken come from?

Food24 visited a KFC outlet in Cape Town and had a look, in detail at the inner workings of the kitchen. We hope we can answer all those FAQ’s about this popular chicken brand.

Where does the chicken come from?

With Rainbow farms as one of KFC’s primary chicken sources, KFC states that the chicken they use is hormone and steroid free as per the regulations for all South African chicken that is produced locally.

KFC has a relentless focus on
quality and spends a lot of time in across all its restaurants ensuring that it
delivers on the best possible dining experience for every customer. This
includes the freshness and quality of their meals as well as how they train their
people to deliver beyond all expectations. They take this very seriously and work with their supply chain to ensure the staff exceed the benchmarks.

The crisp coat

The KFC chicken crisp coat is a top secret method including their secret spice and the iconic hitting together of the two drumsticks.

KFC cooks go through several weeks of rigorous training in store to master the signature KFC recipes and secrets.

The secret spice

Well, that’s a secret which only one man in the country has the recipe to. We tried, but there was no getting that secret recipe!

The frying oil

The oil is clean. (In the state of the art kitchen we toured).

How they test it: A metal pole with a metal disk on 1 end is inserted 5cm downwards into the oil. If the disc is still visible, the cook can use the oil.

The products

KFC has a clock system where they time the shelf life of each batch of fried chicken. It is 10 minutes in the service shute after its fried.

KFC said they handle any non-compliance severely.

The hygiene

An intense wash, rinse and sanitise process is specified for all in the KFC kitchen with every KFC store following strict cleaning and sanitation programs.

Every single person is required to wash, rinse and sanitise their hands every 30 minutes.

The good stuff – charity

‘KFC Add Hope’ is an initiative asking customers to donate R2 to make a difference by feeding a hungry child.

It’s like ordering a phantom meal of R2 and that donation goes to help feed 40 000 children a month. Over R175 million has been raised to date throughout the country.

October is World Hunger Month so KFC is firing up a big drive to feed the future. High 5 for that KFC!
