Happy Diwali

Diwali is a celebration of light, life, wholesomeness and family, and a whole lot more.

While the day has religious significance, the ‘Lighting of the Lamp’ and the light it gives off, embodies universal values. Light always represents divinity, life, knowledge, goodness and creation.

Indeed, the word ‘Diwali’ is derived from ‘Deepavali’, meaning ‘a row of lights’.

In all parts of the world, food is a central and essential part of celebrating festivals. Diwali cuisine has evolved over millennia into a myriad of preparations of lavish sweetmeats, cooling drinks, delicate dishes, savoury snacks and rich desserts.

Typically at Diwali, a variety of sweetmeats and sweet dishes are served.

These are made by combining sugar, fats, milk, flour, nuts, and sometimes even vegetables and fruit.

The Diwali Table must include an exotic and flavourful spread including breads, fine curries, fritters, pulaos and biryanis.

During Diwali I prepare my favourite sweetmeats which are quick and simple to prepare as much as being tasty and wholesome.

My recipes always include Stork Bake, which is a great way to cook and enhances the flavours of the foods.
