Mexico!

When I think of Mexico, along with it comes the sounds of the Gypsy kings and a cute Mexican boy named Rodrigues (let’s not go there) but more importantly are the aromas of warm quesadillas, (for those of you who don’t know, these are tortillas stuffed with cheese, folded and grilled), enchiladas, coated in a tomato and chili sauce, stuffed with vegetables, and baked and ceviche (raw fish marinated in lime juice, often in a chopped salad,) these are a few of the spicy delicacies that make my tummy rumble and right now, my mouth water.

Taste-bud fantasy

In the bustle of today’s life one needs to get lost in fantasies. In this instance a Mexican cuisine fantasy. Mexican food adds attitude and character to it’s dishes. The cuisine from delectable sources such as salsa to devilish drinks such as the ‘infamous’ tequila can bring out the wild side in any timid person.

Here are a few favourites…

Mexicans often have just coffee and sweet rolls first thing in the morning with a more substantial meal around 11am, but many of the options below could feature on a breakfast menu. Egg dishes are also popular, often served with beans.

Brunch Mexican style

Plato de Frutas

Mixed fruit plate, perhaps including banana, mangoes, melon, or papaya (we call this paw-paw).

Chilaquiles Tortillas

Stir fried with onions, spices and maybe chicken, topped with cheese and served with a sort of gravy.

Huevos a la Mexicana

Scrambled with chopped tomato, onion and chilies.

Huevos Rancheros

Fried and smothered with a chili sauce, often hot.

Main course

Chiles Renellos

Large Poblano chilies stuffed with cheese or spicy meat (picadillo). The chilies are mild, though the sauce may not be.

Enchiladas Tortillas

Coated in a tomato and chili sauce, stuffed with vegetables, chicken or pork then folded and baked. Despite the chili content, enchiladas are often fairly mild. Enchiladas suizas are topped with sour cream.

Huachinango

Red Snapper, a common feature on the menus at coastal resorts.

Tamales Cornmeal


A corn or husk parcel stuffed with chicken, pork or turkey and/or vegetables, then steamed.
