Easy braai dessert – pineapple and caramel sauce

I love me a good
old fire-grilled pudding.

There’s something so wonderfully intoxicating about
food that’s been cooked over hot coals.When it’s simple fruit that’s been
blistered until it’s caramelized, I think it takes on a whole new level of
deliciousness.

Here, I’ve given
you the recipe for blistered pineapple, but the recipe would work just as well
using bananas, nectarines, grapefruit or oranges.

Tips for other fruit

1. For bananas, I suggest adding
a drizzle of brandy along with your cinnamon and sugar.

2. For any citrus, no
need to peel them, just slice in half and sprinkle the cinnamon and sugar directly
onto the open halves, then grill them face down.

Ingredients

1 ripe pineapple,
peeled and cut into 1cm slices

1 tsp ground
cinnamon

2-3 tsp light
brown or demerara sugar

Salted caramel to
drizzle oversee how to make it.

OR mascarpone or
vanilla ice cream

 Method

Pre-heat your
braai. Sprinkle the cinnamon and sugar over the pineapple slices and lay
down onto the braai grid for 1-2 minutes, or until just charred, blistered and golden. Turn and repeat.

Serve with a drizzle
of salted caramel sauce, a scoop of mascarpone or vanilla ice cream.
