Deep-fried tequila shots

Soaking sponge cake in liquid is nothing new. It’s been done with sugar syrup since the dawn of (baking) time to preserve cakes and keep them from drying out.

The addition of alcohol is also a common method of soaking cakes – boozy Christmas fruitcake anyone? But when you portion the cake into bite-size pieces and then deep-fry it…well, you’re taking things to a new level of culinary accomplishment!

These tequila shots are an example, and one that we just love! The best thing? It’s just so simple! They come out like a deep-fried fritter of sorts. Great to surprise your dinner guests with after dessert is served.
