The zest of citrus fruit adds new depth of flavour to anything from
cakes and biscuits, to stews and pastas. Lemon or lime juice is
excellent as a replacement for vinegar in salad dressings, marinades or
instead of other liquid in your favourite dessert recipe.
There’s of course more to the citrus family than lemon, limes and
oranges. Any food store worth its pomelo will offer minneolas,
mandarins, tangerines, kumquats, clementines, satsumas, grapefruit and
the absolutely delicious (but quite rare) blood oranges.
