Cheese watchers served new dish

A Texas beef distributor, Winn Meat Co., said that it was putting a Web camera on a piece of premium beef to show viewers its 21-day dry aging process, minute by minute, with the online show to start this week.

“The only thing more boring than watching cheese mold, is watching beef age,” said Winn Co.’s Corporate Chef Jamie Samford.

Samford said the company was inspired by the popularity of the cheese Web cam launched by Britain’s West Country Farmhouse Cheesemakers. It attracted almost 1.5 million views to a cheese named Wedginald www.cheddarvision.tv

Samford said Winn Meat had already conducted one Web cam to test the process before going public with its live action, naming its piece of aging beef Primo.
