The people living in the region never bowed to
the Romans and were a fierce and rather wild people – it took the
Romans centuries to subjugate them, and it was only at the beginning of
the first millennium, (around the birth of Christ) that they gave in.

It is here where one finds the Altamira cave.

Sardines and anchovies play an important role in the cuisine of the region and they are roasted, baked and grilled in a host of different ways.

Milk
and custard dishes are also popular in the region and this is home to
the flan al caramelo (caramel custard), arroz con leche (rice pudding)
and leche frita (deep fried custard slices).
